Coeliac disease is an autoimmune, inflammatory enteropathy triggered by the consumption of gluten-containing foods (including wheat, barley, rye, spelt) in genetically predisposed individuals (HLA-DQ2 / DQ8 positive). The result is a chronic inflammation of the small intestinal mucosa, as well as villus atrophy and malabsorption. The triggers are gliadin peptides from gluten, which pass through the small intestinal mucosa and are deamidated by tissue transglutaminase.
